Banana bread is a staple in many homes, offering that perfect blend of sweetness and comfort, especially when you have some overripe bananas lying around. But today, we’re not talking about your typical banana bread. This version is infused with pistachios and dried mangoes, a combination that’s born from my pantry clean-up, thanks to a recent Costco haul! Let’s take this classic and make it even better with a tropical twist.
Banana Bread History
But before we jump into the recipe, let’s dive into a bit of banana bread history. Bread Banana bread, a beloved classic, has a fascinating history. It wasn’t always as common as it is today. Bananas themselves only became widely available in the United States in the late 19th century. However, it wasn’t until the 1930s that banana bread recipes started making their way into cookbooks. This surge in popularity was thanks to the development of baking powder and baking soda, which made quick breads like banana bread much easier to prepare.
During the Great Depression, many households were looking for ways to make use of ingredients that might otherwise go to waste. Overripe bananas, rather than being discarded, became a key ingredient in the now-famous banana bread. It was a perfect way to avoid food waste while creating something delicious. In more recent times, banana bread saw another resurgence during the COVID-19 pandemic, when home bakers across the world turned to comfort baking as a way to pass the time and soothe anxieties.
Today, banana bread comes in countless variations – from classic Banana Nut Bread to decadent Chocolate Chip Banana Bread, and even Vegan Banana Bread. And now, I’m adding another original to the list: Banana, Mango, and Pistachio Bread.
Why This Combination Works
Let’s be honest, banana bread is pretty versatile. You can add almost anything to it, and it still turns out delicious. But there’s something about this combination of pistachios and dried mangoes that elevates the traditional recipe to something truly special. The pistachios bring a slight crunch and a nutty richness, while the dried mangoes add a chewy texture and a hit of tropical sweetness that pairs beautifully with the banana.
And as a little extra secret ingredient, I’m throwing in some mango apricot-flavoured yogurt. Not only does it add even more moisture to the bread, but it also enhances the tropical vibes with a subtle fruitiness that you don’t get from plain yogurt.
This recipe was inspired by the ingredients I had on hand, and it’s a great reminder not to let things go to waste. I had overripe bananas, a big bag of dried mangoes, and a bulk container of pistachios from Costco that needed to be used. Plus, that tub of mango apricot yogurt that was begging to be included in something delicious. And just like that, this Banana, Mango, and Pistachio Bread was born!
The result? A moist, flavourful bread that’s perfect for breakfast, an afternoon snack, or even dessert. The tropical notes from the mango, the richness from the pistachios, and the classic comfort of banana all come together in a way that’s simply irresistible.
Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
In another large bowl, use an electric mixer to beat the softened butter and brown sugar until the mixture is smooth and creamy.
Stir the beaten eggs and mashed bananas into the butter-sugar mixture until well combined. Mix in the Greek yoghurt and vanilla extract until smooth.
Fold in the dried mangoes and chopped pistachios.
Gently fold the banana mixture into the flour mixture, stirring just until the ingredients are combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and smooth out the top. Bake a 175°C preheated oven for 1 hour, or until a toothpick inserted into the centre comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
This Banana, Mango, and Pistachio Bread is proof that pantry ingredients can lead to delicious, creative results. Whether you’re making it to avoid food waste, or simply because you love the idea of combining tropical flavours with a classic recipe, this bread is sure to impress.
It’s moist, flavourful, and has the perfect balance of textures – the softness of the banana and dried mango, paired with the crunch of pistachios. Plus, it’s an easy recipe to whip up when you need a quick treat that feels indulgent but uses simple ingredients you probably already have.
