Avocado toast has become such a staple that it almost feels ordinary now. You see it everywhere, from neighbourhood cafés to high end brunch spots, each one offering their own variation. For me, though, it remains one of the most satisfying quick meals I can put together at home. It is simple, adaptable and endlessly customisable.

This Sundried Tomato and Goat Cheese Avocado Toast with Balsamic Glaze started as a small tweak to the usual version. I enjoy fresh tomatoes on toast, but one day I decided to swap them for sun dried tomatoes instead. That small change completely transformed the flavour profile.

Sun dried tomatoes bring a deeper sweetness and a slightly tangy intensity that fresh tomatoes simply cannot match. Their concentrated richness pairs beautifully with the cool creaminess of mashed avocado. Add soft, tangy goat cheese and a glossy drizzle of balsamic reduction, and the whole thing feels less like basic toast and more like something you would happily pay for at a café.

Building Flavour from the Base

I always start with good bread. A sturdy sourdough or rustic country loaf works best because it holds the toppings without becoming soggy. I toast it lightly so the edges crisp up while the centre stays slightly tender.

For the avocado, I keep things fresh and bright. I mash ripe avocados with lemon juice, a pinch of salt and finely chopped basil. The lemon lifts the richness while the basil adds a fragrant, almost sweet herbal note. I avoid over mashing because I like a bit of texture rather than a completely smooth paste.

When I spread that vibrant green mixture generously over warm toast, it already smells incredible. But the real magic happens once the toppings go on.

Finally, I finish everything with cracked black pepper, more basil and a drizzle of balsamic glaze. The glaze adds a glossy finish and a sweet, sharp complexity that ties all the elements together.

A Mediterranean Influence

While avocado toast itself gained modern popularity through Australian café culture in the 1990s and 2000s, the individual components of this version draw heavily from Mediterranean traditions. Sun dried tomatoes have long featured in Italian cooking, particularly in southern regions where preserving tomatoes under the sun allowed families to enjoy their flavour year round.

Goat cheese also holds strong roots in Mediterranean cuisine. Countries like Italy, France and Greece have produced fresh and aged goat cheeses for centuries. Their tangy character often complements vegetables, herbs and olive oil based dishes.

Balsamic vinegar originates from Modena in Italy, where traditional balsamic vinegar has been aged for years, sometimes decades, to develop its rich and complex flavour. Reducing balsamic vinegar into a glaze intensifies its sweetness and creates a syrupy consistency that works beautifully in modern dishes like this one.

When you combine these elements with creamy avocado, you create something that feels contemporary but still grounded in long standing culinary traditions.

A Meal for Any Time of Day

What I love most about this toast is its versatility. It works as a satisfying breakfast when you want something more substantial than cereal. It makes an excellent light lunch paired with a simple salad. It even holds its own as an appetiser when cut into smaller pieces and served on a platter.

It feels refreshing yet indulgent. The richness of the avocado and cheese satisfies, while the basil and lemon keep everything bright. The balsamic glaze adds just enough sweetness to round out the savoury notes without overwhelming them.

Most importantly, it comes together quickly. In about fifteen minutes, you have something that looks vibrant, tastes balanced and feels thoughtfully prepared. It proves that a few quality ingredients, combined with care and a bit of creativity, can elevate even the simplest slice of toast into something special.

Description

Ingredients

Balsamic Glaze Toast
  • 4 slices bread, lightly toasted
  • 2 ripe avocados, mashed
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon lemon juice
  • salt, to taste
  • 1 cup sun dried tomatoes, drained and sliced
  • fresh cracked black pepper, to taste
  • 2 tablespoons balsamic glaze
  • 1/4 cup goat cheese, crumbled
  • 2 tablespoons basil, thinly sliced for garnish

Instructions

Balsamic Glaze

  1. Pour the balsamic vinegar into a small saucepan.
  2. Add the sweetener if using.
  3. Bring to a gentle boil over medium heat.
  4. Reduce the heat to low and let it simmer uncovered.
  5. Cook for 12 to 20 minutes, stirring occasionally, until the vinegar reduces by about half and coats the back of a spoon.
  6. Remove from heat and allow it to cool completely. It will thicken further as it cools.

Toast

  1. In a bowl, mix the mashed avocado with chopped basil, lemon juice and salt.
  2. Spread the avocado mixture generously over the toasted bread slices.
  3. Top each slice with sun dried tomatoes.
  4. Add cracked black pepper and sprinkle with crumbled goat cheese.
  5. Drizzle with balsamic glaze.
  6. Finish with extra sliced basil and serve immediately.

    Thank you bigtime for the idea! “Cause smashed avocado on dark rye sourdough, together with the biggest mug of the strongest black coffee, is my breakfast at least three times a week but I had not thought to make it better with sundried tomatoes – no problem, will be done after the next shop? Sometimes a wholegrain wrap with lots of grainy bits in it fits the bill also . . .

  6. You’ve brought Avocado Toast to a new level! I thought Avocado Toast was just mashed avocados and a little salsa! I always get excited about avocados when I go grocery shopping, but then when I get them home I let them sit too long and they turn mushy and brown! I bet adding that lemon juice would help to preserve them. Hey, I thought you lived in New Zealand? Have you moved to Australia now?

    I love smashed avocado on toast. I love your twist, Raymund, with having sundried tomato and goats cheese on it, instead of poached eggs, which is what I would usually have. Thank you for the idea!

  9. I’ve never met an avocado toast I didn’t like. I’m usually pretty lazy about it though, so this looks like a gourmet treat compared to my bare-bones salt + pepper staple!
