If there’s one cut of meat I’ll never tire of, it’s beef ribs. Right after oxtail, it’s my favourite—it’s meaty, rich in collagen, and has an incredibly satisfying texture that holds up well to long, slow cooking. I’ve done ribs inspired by Argentine flavours, Kiwi-style with Manuka, American barbecue, and even Creole. This time, I decided to take a trip to Korea—culinarily speaking, of course—with these Oven Baked Korean BBQ Beef Ribs.

This dish is essentially a bulgogi in rib form. Traditionally, bulgogi (불고기), which means “fire meat,” is made with thinly sliced beef that’s marinated then grilled or pan-fried. But here, instead of slices, I went big—with whole slabs of beef back ribs—and slow-baked them in the oven. It’s the same great marinade you’d use for bulgogi: a savoury-sweet blend of soy sauce, garlic, sesame oil, sugar, and fruit like pear or apple to both sweeten and tenderise.

Why beef ribs? Apart from the obvious “because they’re delicious,” they also offer a hearty, rustic feel that’s perfect for family-style dinners or special occasions. Plus, ribs love to soak up marinades, and when cooked slowly in the oven, the flavours penetrate deep while the meat becomes fall-apart tender. The kitchen fills with an incredible aroma—sweet, garlicky, and savoury—that signals something special is happening in the oven.

The History Behind Bulgogi

Before we get into the recipe, a quick detour into the history of bulgogi. Its roots stretch all the way back to the Goguryeo era (37 BCE–668 CE), where it began as maekjeok, skewered and grilled meats cooked over open flame. During the Joseon dynasty, it evolved into neobiani—thinly sliced beef grilled over charcoal, usually reserved for the aristocracy. Eventually, the dish became known as bulgogi, referring to the fiery cooking method.

While bulgogi lost some popularity during the Japanese occupation due to beef shortages, it made a huge comeback in the latter half of the 20th century. By the 1990s, it had regained its place as a beloved Korean staple. Today, bulgogi has crossed borders and taken on countless new forms—bulgogi tacos, burgers, even pizza. My oven-baked ribs are a continuation of that evolution.

The Method

What I love about this version is its simplicity. Once the marinade is blended, you just pour it over the ribs, let it do its magic in the fridge, then bake low and slow until everything melts into tender perfection. No grilling or basting needed. It’s basically a set-and-forget kind of meal, but the flavours are anything but forgettable.

Perfect for weekends, dinner parties, or just when you’re craving something deeply savoury, these Korean BBQ beef ribs are guaranteed to impress. Serve them with rice, kimchi, or even some pickled daikon on the side for balance.

Now, let’s get cooking.

  1. Love beef ribs though I don’t do Korean beef because it contains so much sugar in the marinade.
