This recipe idea was born after watching Josh and Ollie rave about Dollywood’s famous cinnamon bread on YouTube. Their glowing review—and the crowd of people urging them to try it—made it clear that this was no ordinary loaf of bread. Living far from Dollywood, I wasn’t sure when (or if) I’d ever get to experience it firsthand, so I decided to recreate the magic at home.

Dollywood’s cinnamon bread is an iconic treat from the Grist Mill, freshly baked daily to the delight of park visitors. Soft, yeasted bread coated with cinnamon, sugar, and butter, often topped with powdered sugar glaze, or served with apple butter—what’s not to love? It’s no surprise that guests form long lines just to grab a loaf.

Instructions

  1. In a small bowl, combine yeast with ½ cup warm water and a pinch of sugar. Let it sit for about 5 minutes until foamy.
  2. In the bowl of a stand mixer, mix the bread flour and salt. Add the melted butter (ensure it’s not hot) and the yeast mixture.
  3. Using the dough hook attachment, knead the mixture for 10 minutes until the dough becomes smooth and elastic.
  4. Transfer the dough to a lightly greased bowl, cover with plastic wrap or a clean towel, and place in a warm area. Let it rise for about 1 hour or until doubled in size.
  5. Line a cookie sheet with parchment paper and grease it with a little bit of oil. Punch down the risen dough and divide it into two equal portions.
  6. Shape each portion into a 3 x 6-inch rectangle and place them on the prepared sheet. Lightly grease plastic wrap with oil and cover the dough. Let rise again until doubled, about 30 minutes.
  7. In a dish, whisk together the melted butter and golden syrup.
  8. In another dish, mix the white sugar, brown sugar, and cinnamon.
  9. Preheat your oven to 180°C. Line two 9 x 5-inch loaf pans with parchment paper.
  10. Use a sharp knife to cut 4 deep slashes across the top of each loaf, slicing halfway through the dough. Be gentle, as the dough is soft and may deflate slightly.
  11. Dip each loaf into the butter mixture, turning to coat both sides thoroughly. Then coat each loaf in the cinnamon-sugar mixture, ensuring the topping gets into the slashes. Place the coated loaves into the prepared loaf pans.
  12. Drizzle any remaining butter mixture over the loaves and sprinkle with the remaining cinnamon-sugar topping.
  13. Bake in the preheated oven for about 25 minutes or until the loaves are lightly browned and fragrant.
  14. Carefully lift the bread out of the pans using the parchment paper and let them cool on a wire rack for about 15 minutes.
  15. Serve

    I never heard of Dollywood’s cinnamon bread before but I can immediately see the appeal. Who doesn’t love a butter, cinnamon-sugar treat, after all? I don’t even need to have the original to know I’d love your version.
