Description

Creamy Cauliflower Alfredo Pasta—a lighter, vegan-friendly twist on the classic, cooked in under 20 minutes. Perfect for a quick, healthy dinner!


Ingredients

  • 1 head cauliflower, cut into florets
  • 400 g pappardelle (or your favourite pasta)
  • 1/2 cup milk (dairy or plant-based)
  • 2 small shallots, minced
  • 6 garlic cloves, minced
  • salt, to taste
  • ground white pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Bring a large pot of water to a boil. Add the cauliflower florets and cook, covered, for 10 minutes or until fork-tender. Reserve 1 cup of the cooking water, then drain the cauliflower.
  2. While cauliflower is cooking, on a separate pot cook pappardelle according to packet instructions.  Once cooked, drain then set it aside.
  3. Heat olive oil in a large skillet over medium heat. Add the minced shallots and garlic, sautéing until soft and fragrant.
  4. Use a slotted spoon to transfer the cooked cauliflower to the skillet. Season with salt and white pepper, and cook for 1 minute to let the flavours meld.
  5. Transfer the cauliflower mixture to a blender. Add the reserved cooking liquid and milk. Cover the blender lid’s vent with a thin kitchen towel and blend until smooth and creamy (about 1 minute). If the sauce is too thick, add a bit more water, milk, or olive oil.
  6. In a large bowl, toss the cooked pappardelle with the Cauliflower Alfredo sauce until evenly coated. Serve immediately.
