Asparagus and Minced Pork Stir Fry

There is nothing better than leaving office at 4:30 PM , arriving home at 5:00 PM, prepare dinner and eat around 5:30PM then at 6:00 PM you’re done, all you need is to enjoy the summer days until the sun sets at 8:30 PM. I love this lifestyle, loving it for more than 14 years now, back home in the Philippines the earliest time I arrive home is around 8:00 PM and its dark, this is all due to traffic and inflexible working arrangement. At that stage I am tired, no energy to cook, all I need is have a snooze and repeat the process.


Yes, its summer here down under and that means longer days and asparagus is abundant and cheap, hence the last time I was in the supermarket I grabbed two bunches plus a bit of minced meat, so all I need is to quickly stir fry this thing up to make a simple Asparagus and Minced Pork Stir Fry. Once prepared all you need is to sit down, relax and have a nice simple dinner with the family while enjoying the long days we have here in New Zealand. So if you live in New Zealand, there is nothing as satisfying as cooking as quickly as possible and finishing dinner at 6:00 PM during summers, this means so you can enjoy more quality time in the sun with the family.

Asparagus and Minced Pork Stir Fry

Serves: 4
Ingredients
  • 300 g asparagus, trimmed and sliced
  • 300 g fatty minced pork, 30% fat
  • 1 medium sized red onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • freshly ground black pepper
  • 2 tsp red chilli flakes
  • oil
Instructions
  1. In a wok add oil and sauté garlic and onion in high heat.
  2. Add pork and chillies and stir fry until cooked and brown.
  3. Add asparagus and stir fry for 3 minutes.
  4. Add soy sauce and oyster sauce mix for 1 more minute and season with freshly ground black pepper.
