Tinapa Flakes, Salted Duck Egg and Tomato is a type of side salad dish most probably of Filipino origin. I said most probably as I haven’t tried or seen this back home and just got introduced to it here in New Zealand when a Filipino friend of mine served it as a side dish. It can be enjoyed on the side or as mains as it is quite tasty, it is made with tinapa (a Filipino style smoked fish), salted duck eggs and chopped tomatoes.

Ingredients

Scale
  • 1 packed cup flaked tinapa
  • 1 large tomato, seeded
  • 2 salted duck eggs , peeled and chopped
  • 1 small white onion, finely diced

Instructions

  1. In a bowl combine all ingredients, toss and mix well then serve.
