Although they resemble American green beans, Chinese long beans are a different species, typically growing about 1 ½ feet long. They have a denser texture, and I find their flavour to be sweeter and nuttier.

One of my favourite ways to cook green beans is to fry them until their outer skin blisters and they become irresistibly sweet. Snake beans are no exception; they can be fried in batches until they develop a lovely, blistered texture. Adding slivers of garlic to the mix enhances their flavour, creating a simple yet delightful dish that’s perfect for busy weekdays.

When preparing this dish, I like to keep the beans long, letting them snake around the plate for an appealing presentation. However, I trim them to manageable lengths for the cooking process.

Description

Delicious Chinese style fried snake beans with garlic. Blistered and sweet, these long beans are seasoned with soy sauce and garlic for a quick and easy side dish.


Ingredients

  • 1 bunch sting beans (sliced into 2-inch segments)
  • 6 cloves garlic, thinly sliced
  • 1 tbsp soy sauce
  • 1/2 tsp salt
  • vegetable oil, for frying

Instructions

  1. Heat a generous amount of vegetable oil in a wok or large frying pan over medium heat.
  2. Add the thinly sliced garlic to the hot oil. Stir-fry until the garlic starts to turn golden brown and releases its aroma. Be careful not to burn the garlic as it cooks quickly. Remove garlic from wok then set it aside.
  3. Bring heat to high then add the sliced long beans to the wok. Stir-fry the beans until their outer skin blisters and they are tender yet slightly crisp. This should take about 5 minutes. Ensure to stir the beans frequently to avoid burning.
  4. Once the beans are cooked, add soy sauce and salt to taste. Toss everything together until the beans are evenly coated with the seasoning.
  5. Transfer the stir-fried garlic long beans to a serving dish then serve.

  • 1.5 feet long!? I can't imagine such beans! I don't think we can get those here, but I'll check the Asian market next time I go in. I suspect I could use American string beans though. The fried idea is excellent!

    • They’re easy to grow as long as your soil is warm when you plant them. I cut them when they are about 10 inches long. I don’t like the really long ones.

  • Snake beans are wonderful, and everything is better with garlic! That's a winning combination right there. It's hard for me to find these sometimes, but the same idea works brilliants for snap peas, green beans, asparagus... Pretty much any green vegetable!
