This Mexican-inspired rib recipe is a fantastic way to switch up your classic pork ribs. With a flavour profile that’s slightly sweet, a bit tangy, and packed with smoky heat, these ribs are sure to impress.

I’ve always had a love for smoke-flavoured foods, probably because it’s embedded in my blood. Growing up, my grandmother would prepare dishes cooked in palayok over a wood-fired open flame outdoor stove, which imparted a delightful smokiness on everything, not just grilled meats but also stews, casseroles, and even rice. In the Philippines, inihaw (grilled over charcoal) is a big part of our cuisine, featuring pork barbecue skewers, chicken barbecue, fish, and a variety of street food.

Although it’s the dead of winter here, the time of year doesn’t matter when it comes to these ribs. After making this recipe once, you’ll find yourself turning to it for any occasion—whether it’s a BBQ to kick off summer, a birthday party, a family gathering, or just a normal winter day, like today. These Chipotle Honey BBQ Ribs will never disappoint!

I’ve had many people tell me they think making ribs at home is too difficult and they’re scared of messing them up. This is far from the truth! There’s no need to be intimidated by grilling or smoking ribs, or any other large meat. I prefer using my charcoal grill as a smoker (as I don’t own a proper smoker) and then finishing the ribs off in the oven. It’s as simple as smoking them and then placing them in the oven on low heat. I used to do it the other way around, but smoking first and then finishing in the oven gives a much smokier flavour. Meat absorbs the most smoke within the first two hours of cooking when it is not yet cooked, so it’s better to smoke first and then finish in the oven to get that perfect smoky flavour. This method is what we used for our recipe today.

Instructions

  1. Prepare the Ribs, start by removing the membrane from the back of the ribs. This will help the ribs to become tender and allow the flavours to penetrate better. Season the ribs generously with salt, pepper, smoked paprika, garlic powder, onion powder, and ground cumin.
  2. Make the Sauce, in a medium bowl, mix together the minced chipotle peppers, honey, brown sugar, apple cider vinegar, tomato ketchup, and soy sauce. This will be your sauce.
  3. Smoke the Ribs, prepare your hooded charcoal grill a bit of charcoal, light it up and make sure it is in full ember, add your wood chips (I used manuka wood chips) and let it smoke. Place the ribs away from the direct heat and smoke for about 2 hours.
  4. Remove ribs from the grill then coat it with the sauce, wrap the whole ribs tightly using an aluminium foil, seal the edges then finish in the 150C preheated oven. Bake for an additional 2 1/2 hours or until the meat is tender and pulls away from the bone easily.
  5. Caramelize the sauce, remove the foil and brush the ribs with more of the chipotle honey sauce drippings. Increase the oven temperature to 200°C and bake for another 10-15 minutes, or until the sauce has caramelized and become sticky.
  6. To serve, let the ribs rest for a few minutes before cutting them into individual pieces.

This recipe, while simple, delivers immense flavour and is sure to become a favourite at your table. Enjoy the smoky, sweet, and tangy taste of these Chipotle Honey BBQ Ribs anytime you crave a hearty and satisfying meal.
