Kimchi Cheese Toastie

A combination that sounds weird, but sometimes weird things are delicious. Kimchi Cheese Toastie is a popular Korean street food made with kimchi and cheese sandwiched on a bread then toasted to golden perfection.

One of the YouTube channels we follow is Jolly, a channel where these two English gents promotes a lot of Korean culture and its dishes, having lived in Korea and know how to speak the language there is wealth of information that you can gather with this channel specially if you are interested in Korean cuisine. One of the latest one I learned from this channel is this recipe of ours today, the Kimchi Cheese Toastie. These guys love it and swear by it, they let many of their friends and acquaintances try it, they even opened up a restaurant that sells only this.

The sound of cheese mixed with kimchi placed in a bread does not sound appetizing at all but after giving it a go, I now understand why they are banking on this specific street food. I know it’s hard to digest that combo but give it a try even just once and see for yourself the delicious simple combination that is Cheese and Kimchi.

Instructions

  1. In a pan or a sandwich press melt the butter then place both sliced bread on top and let it absorb the melted butter.
  2. On one sandwich, place the following in order, process cheese slice, kimchi (spread across), grated mozzarella then another processed cheese. Place the empty sandwich on top then toast both sides. If using a sandwich press cook for 4 minutes until crispy and toasted on both sides. If you’re using a pan then toast one side for 4 minutes, place a cover to trap the steam then gently flip it over to toast the other side for another 4 minutes, no need to cover after it was flipped.
  3. Cut in half then serve straightaway.

  • I have heard there are recipes for garlic-free kimchi — would love to make it just so I can have this toastie, which looks fantastic!

  • Some of the most delicious things I've eaten sounded weird at first, so this has "eat me!!!" written all of it. Love kimchi and grilled cheese so the marriage of the two sounds awesome!
