Apple and Mixed Berry Crumble

  • 6 Granny Smith apples, peeled, cored and sliced
  • 3 cups frozen mixed berries
  • 75g butter, chilled and cubed
  • ¾ cup flour
  • ½ tsp baking powder
  • 1 cup rolled oats
  • ½ cup malt crackers, roughly crumbed
  • ¼ cup white sugar
  • ⅓ cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tbsp maple syrup
  • vanilla ice cream, to serve
  1. In a saucepan combine ¼ cup white and apples. Place over medium heat and cook for 5 minutes. Set aside.
  2. Place flour, baking powder and butter in a food processor, process until it the texture resembles coarse breadcrumbs.
  3. Transfer the butter and flour mixture in a large bowl. Mix in oats, malt crackers, brown sugar, cinnamon and maple syrup.
  4. Place apples in 9 x 13 inch baking dish, then the mixed berries and the crumble mixture.
  5. Place in a 180C preheated oven and bake for 30-35 minutes or until top turns golden brown. Remove from oven serve while hot with vanilla ice cream on the side.
