Spinach and Mushroom Stir Fry

Serves: 2-3
  • 1 packet spinach (roughly 5-6 bunches)
  • 1 cup straw mushrooms, sliced in half
  • 3 cloves garlic
  • fish sauce
  • oil
  1. In a pot add water and bring it to a boil, once boiling blanch spinach quickly then drain and rinse with cold water. Set aside.
  2. In a wok add oil then sauté garlic.
  3. Add mushrooms and stir fry for 2 minutes.
  4. Add spinach and stir fry for 30 seconds.
  5. Season with fish sauce then serve.
