Tokwa’t Baboy (Pork and Tofu)

  • 6 pcs pork’s ears
  • 2 blocks firm tofu
  • 2 large white onion, chopped
  • 1 cups white vinegar
  • ½ cup soy sauce
  • ¼ cup water
  • black pepper
  • 4 tsp brown sugar
  • 2 tbsp sesame oil
  • green finger chillies, chopped
  • salt

  1. Rub salt, pepper and sesame oil in pork ears then set aside for 30 minutes.
  2. Prepare a steamer and steam pork’s ears for 45 minutes or until, it becomes tender and sticky. Remove from steamer and cut into bite sized pieces.
  3. In a fryer, deep fry tofu until outer skin is golden brown and crispy. Remove from fryer let it cool then slice into cubes, set aside.
  4. Mix the vinegar, onions and soy sauce with ¼ cup water, sugar and freshly ground black pepper.
  5. Place chopped ears and tofu into a deep dish and pour vinegar mixture then topped with chopped chillies.
