Steak Tartare

  • 200g filet mignon, minced or chopped
  • ½ tsp chopped parsley
  • 1 tsp finely chopped red capsicum
  • 1 tsp finely chopped yellow capsicum
  • egg yolk
  • 1 tsp Worcestershire sauce
  • 1 tsp brandy
  • 1 tsp mustard
  • ½ tsp chilli sauce (Tabasco)
  • salt
  • freshly ground black pepper
  • cayenne pepper
  1. In a bowl mix together the beef, parsley, red and yellow capsicum, Worcestershire sauce, brandy, mustard, chilli sauce, salt and pepper.
  2. Place meat mixture in ramekin then refrigerate for 30 minutes, this will allow the flavours to develop.
  3. Place on a plate then serve with egg yolk on top.  Serve with rye bread or crackers.
