Ingredients
Meatloaf
  • 400g minced beef
  • 400g minced pork
  • 2 eggs
  • 1 cup evaporated milk
  • 1 cup bread crumbs
  • 1 medium carrots, chopped
  • 1 small red capsicum
  • ½ tsp cayenne
  • 1 tsp dried thyme
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • salt
  • freshly ground black pepper
Glaze
Instructions
  1. Mix all ingredients in a large bowl, season it with salt and freshly ground black pepper then place in a loaf pan.
  2. In a separate bowl combine glaze ingredients then pour over meatloaf.
  3. Bake in a 175C preheated oven for 1 hour.
