Cold Noodles With Sesame Sauce, Egg and Cucumbers

Serves: 3-4
  • ½ telegraph cucumber, thinly sliced into match stick
  • 250 g thick round rice sticks
  • 3 eggs, beaten
  • roasted sesame sauce
  • oil
  1. Prepare rice noodles according to packet instructions
  2. In a pan add small amount of oil then cook beaten eggs in batches, it should be crepe thin. Once cooked place in a chopping board and thinly slice the eggs.
  3. Place all ingredients in a bowl apart from the sesame sauce. Then drizzle some sesame sauce on top then toss. Serve with your favourite barbecue.
