  • 1½ kg pork leg, sliced into 1½ to 2 in sections
  • 8 cloves garlic, minced
  • ½ cup soy sauce
  • ½ cup vinegar
  • 2 cups water
  • ¼ cup brown sugar
  • ½ packed cup dried banana blossoms
  • 4 pcs dried bay leaves
  • 1 tbsp whole peppercorns
  • salt
  • oil
  1. In a wok heat up oil then brown pork leg on both sides, remove from wok then set aside.
  2. Add the garlic and sauté until golden brown and fragrant.
  3. Add the pork leg back in then pour water together with the soy sauce, half of the vinegar, peppercorn and dried bay leaves. Bring this to a boil then simmer in low heat for 1½ hours or until tender.
  4. Add the remaining vinegar, sugar and the banana blossoms then continue to simmer for 15 - 20 more minutes.
  5. Season with salt then serve.
