Serves: 4
  • 250 g smoked fish (haddock or cod)
  • 2 medium potatoes, cubed
  • 2 tbsp butter
  • 1 medium onion, chopped
  • 2 tbsp flour
  • 300 ml water
  • 250 ml milk
  • salt
  • freshly ground black pepper
  • chopped parsley, to garnish
  1. In a pot melt butter and sauté onion until soft.
  2. Gently sprinkle flour then stir to cook.
  3. Pour water gently while mixing, then add the potatoes. Bring to a boil, lower heat and simmer for 10 minutes.
  4. Add the fish and milk then simmer for 10 more minutes in low heat.
  5. Flake the fish then season with salt and freshly ground black pepper.
  6. Turn heat off then serve with bread and butter, garnish soup with chopped parsley
