Chicken in Milk

Serves: 4-5
  • 1 whole chicken (roughly 1.5 kg)
  • 500 ml milk
  • 1 stick cinnamon
  • 1 tbsp dried sage
  • lemon zest
  • 1 whole garlic
  • sea salt
  • freshly ground black pepper
  • olive oil
  1. Season whole chicken generously with sea salt and freshly ground black pepper
  2. In a large pan heat up small amount of olive oil then evenly brown all sides of chicken.
  3. Prepare a pot that can perfectly fit the chicken, place you chicken in this pot along with any oil from the pan.
  4. Add the milk, cinnamon, dried sage, lemon zest and garlic then bake in a 190C preheated oven for 1½ hours occasionally basting it with the liquid.
  5. Remove from pot then serve like how you serve roast chicken.
