Serves: 6 large muffins
Ingredients
  • 1 cup cornmeal
  • 1 cup flour
  • ½ cup cooked corn kernels
  • ⅓ cup white sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 egg, beaten
  • ¼ cup oil
  • 1 cup milk
Instructions
  1. In a large bowl combine all ingredients and stir gently until smooth in texture.
  2. Place in muffin cup lines muffin trays and bake in a 200C preheated oven for 15 to 20 minutes or until cake tester comes out clean.
