Roasted Garlic Cauliflower

Serves: 4
  • 1 cauliflower head, cut into florets
  • 4 cloves garlic, minced
  • juice from half a lemon
  • 3 tbsp olive oil
  • sea salt
  • freshly ground black pepper
  • parmesan cheese
  1. In a large salad bowl combine lemon, olive oil, garlic and sea salt.
  2. Add the cauliflower and toss to coat vegetables evenly.
  3. Place in a baking paper lined baking tray then season with freshly ground black pepper, bake in a 200C preheated oven for 25-30 minutes or until florets turn light brown. Once cooked remove from oven then place in a serving plate.
  4. Serve generously with finely grated parmesan cheese.
