Chicken Quesadilla

Serves: 4-5
  • 10 corn tortillas
  • 1 pc roasted large chicken breast, cut into strips
  • 1½ cups Colby cheese, grated
  • 1½ cup mozzarella cheese, grated
  • 2 tomatoes, skinned, seeded and diced
  • 1 white onion, finely chopped
  • juice from 1 lime
  • 2 jalapeno pepper, seeded and finely chopped
  • salt
  • pepper
  • oil
  1. In a small bowl, mix together tomatoes, onion, lime juice, jalapeno, chicken strips, mozzarella cheese, Colby cheese, salt and pepper. Set aside.
  2. Grease a large pan with then oil wiping off excess with paper towel. Turn on the heat to the lowest setting then once pan is hot place 1 flour tortilla on the pan, place the cheese mixture on top then finally another flour tortilla on top. When the bottom tortilla is a bit toasted and cheese starts to melt flip and cook the other side. Do it with the remaining tortillas.
  3. Remove from pan, cut into quarters then serve with guacamole, tomato salsa, sour cream and extra jalapenos.
