Ingredients

Scale
  • 4 slices bacon, chopped
  • 1/2 white onion, minced
  • 1 large bunch kale, washed and dried
  • 2 cloves garlic, minced
  • salt
  • freshly ground black pepper

Instructions

  1. In a pan over medium heat, cook the bacon until crisp. Remove and set aside, leaving the rendered fat in the pan.
  2. Reduce heat to medium low and sauté the onion in the bacon fat until soft and translucent.
  3. Add the kale and garlic, stirring continuously until the kale is wilted and tender.
  4. Season with salt and black pepper to taste.
  5. Return the crispy bacon to the pan, mix through, and serve immediately as a side dish.

    ‘Cause everything’s better with bacon (and garlic)! But I know what you mean about kale. I don’t think I’d even heard of it growing up, then when I got it in my farm boxes I made kale chips or composted it. But today I have so many ways to use it. And one more now!
