Description

Chè Thạch Vải is a refreshing Vietnamese dessert made with lychee, nata de coco, grass jelly and sweet lychee syrup over ice.


Ingredients

Scale
  • 1 can lychees, including all the syrup
  • 1 jar nata de coco, drained
  • 1 can grass jelly, cut into cubes if required
  • ice cubes or crushed ice, for serving
Optional
  • A few drops of pandan essence
  • cold water, to adjust sweetness

Instructions

  1. Chill the lychees, nata de coco and grass jelly until thoroughly cold.
  2. Pour the lychees together with all of their syrup into a large serving bowl or jug.
  3. Add the drained nata de coco and the cubed grass jelly.
  4. Stir gently until everything is evenly combined.
  5. If desired, stir in a splash of cold water to reduce the sweetness or a few drops of pandan essence for extra fragrance.
  6. Fill serving glasses with plenty of ice and spoon the chilled dessert over the top.
  7. Serve immediately while icy cold.
