This Mediterranean Chickpea Salad with Grilled Halloumi is not a side dish pretending to be a meal, it is the meal. And honestly, this style of salad is my favourite kind.

It starts with crisp, cold greens. Fresh lettuce, mixed leaves, and crunchy vegetables form the base. On their own, they would already be lovely, but what makes this salad special is everything that gets layered on top. Crispy roasted chickpeas and golden halloumi cubes, both seasoned generously with smoked paprika, bring warmth, depth, and that savoury, almost meaty satisfaction that makes this dish feel substantial.

Then there is the dressing. I used my creamy roasted sesame dressing, which has quietly become a family favourite over the years. It is rich without being heavy, nutty without overpowering, and it coats the leaves beautifully. Combined with the halloumi and chickpeas, it turns a bowl of vegetables into something you actually crave.

Avocado is optional, but highly recommended. It adds another layer of creaminess that plays beautifully with the halloumi and dressing.

Description

Ingredients

Roasted Chickpeas and Halloumi Cold Salad
  • 4 cups mixed greens
  • 1 iceberg lettuce, chopped
  • 150 g cherry tomatoes, halved
  • 1 large avocado, cubed
  • 3 tbsp red onion, finely chopped
Others
  • Roasted sesame dressing, to taste

Instructions

  1. In a mixing bowl, toss the halloumi and chickpeas with olive oil and smoked paprika until well coated.
  2. Spread them evenly on a baking tray and roast in a 200C preheated oven. for 20 minutes, or until the chickpeas are crisp and the halloumi is golden around the edges.
  3. While they roast, prepare the cold salad ingredients and place them in a large bowl.
  4. Remove the halloumi and chickpeas from the oven and let them cool slightly.
  5. Pour the roasted sesame dressing over the salad and toss gently to coat the leaves.
  6. Add the roasted chickpeas and halloumi. Scatter over the top or gently fold through, depending on the size of your bowl.
  7. Serve immediately and enjoy.
