Description
Fried tofu braised in a savoury gravy with prawns, crab meat, soy, oyster sauce, and aromatics for a rich seafood dish.

- 300 g firm tofu, cut into cubes and deep fried until golden
- 10 large prawns, cleaned
- 170 g canned crab meat
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup chicken stock
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1 tbsp cornstarch mixed with 2 tbsp water
- 2 tbsp cooking oil
- 1 tsp sesame oil
- 2 stalks spring onions, chopped
- salt
- freshly ground black pepper
Instructions
- Deep fry tofu cubes until golden and drain well.
- Heat oil in a wok. Add garlic and onion, sauté until fragrant.
- Add prawns and cook until they turn pink.
- Add crab meat and fold it gently into the mixture.
- Pour in chicken stock, soy sauce, oyster sauce, and sugar. Bring to a simmer.
- Add cornstarch slurry and cook until the sauce thickens into a gravy.
- Add fried tofu and simmer for 2 to 3 minutes so it absorbs the sauce.
- Finish with sesame oil and spring onions. Season with salt and pepper.
