There are dishes that come from careful planning, and there are those that simply fall into place as if they were meant to happen. This Braised Tofu and Prawns with Crab Meat sits firmly in the latter category. It started on an ordinary day, the kind when you look through the pantry hoping to find inspiration, and there it was: a lone can of crab meat, brought home from our trip to the US. I kept saving it for the right moment, and it turned out this was exactly the meal it had been waiting for.

Discovering the Magic of Fried Tofu

Tofu has always fascinated me. It is humble, gentle, and adaptable, but it becomes something extraordinary when fried. I have always loved how the heat transforms it into little cubes with a crisp exterior that gives way to a soft, custard-like centre. More importantly, fried tofu behaves like a sponge, absorbing whatever sauce it swims in. That is why, when I set out to make this dish, I knew tofu would not just be part of the recipe, it would be the heart of it.

The way it soaks up gravies and broths is what makes braised tofu dishes in Chinese cuisine so beloved. In many regions of China, braised tofu has long been a comforting household staple, often cooked with minced meat or seafood, and finished with spring onions for brightness. As these traditions travelled across Asia, home cooks reinterpreted them based on what was available. In Southeast Asia and the Philippines, adding seafood came naturally, especially in coastal communities where prawns and crabs are everyday ingredients. This dish continues in that spirit, blending familiarity with something a little more indulgent.

A Dish Born from Seafood Cravings and Travel Memories

The real turning point came when I paired the fried tofu with large prawns and that treasured can of crab meat. It felt like a small luxury, but also a reminder of our journey abroad, where I picked it up thinking I would one day use it in something special. That moment finally arrived. As soon as the prawns hit the wok and turned pink, and the crab meat gently folded into the aromatics, the kitchen took on the scent of a dish that promised comfort and decadence in equal measure.

The sauce came together the way a good braised tofu should: savoury from soy and oyster sauce, lightly sweetened with sugar, and rounded out with chicken stock. With the cornstarch slurry, everything thickened into a glossy gravy that clung perfectly to the tofu. The final touch of sesame oil and spring onions added warmth and freshness.

The Pleasure of Spoonfuls

The first spoonful said everything. The tofu, now plump from soaking up the broth, delivered a burst of flavour. The prawns brought sweetness and a bit of bounce, while the crab meat added a gentle richness that tied the entire dish together. Paired with hot jasmine rice, it became the kind of meal that invites silence at the table because everyone is too busy enjoying it.

What I love most about dishes like this is how they capture a bit of personal history. That can of crab meat from the US was no longer just a pantry item. It became part of a story, folded into a recipe that turned out to be comforting, elegant and deeply satisfying. Cooking often does that, turning simple ingredients into something that brings back memories while creating new ones at the same time.

A New Ang Sarap Classic

This recipe feels like a natural extension of the braised tofu dishes I have always loved, but with flavours that suit exactly how we like to eat at home. It is another Ang Sarap original, something I have not really seen elsewhere, but inspired by the classics I grew up enjoying. The combination of tofu and seafood creates harmony on the plate, and I can easily imagine making this again and again whenever we want something hearty yet refined.

Sometimes the best dishes are born from what you already have on hand, guided by instinct and shaped by nostalgia. This was one of those recipes, and I am glad it found its way to the table.

Love the way your dish came together – it looks oh so appetizing! Don’t remember whether I have had crab and prawns together but the firmness of one juxtaposed against the shredded softness of the other does appeal! Love tofu also . . .

  4. Sounds amazing, Raymund! You’re so right, some of the best dishes are the ones we make up on the spot with the ingredients we find in our fridge. And this one is proof.

  5. This sounds delightful, Raymund — great flavors and two of my favorite things: shrimp and crab!

Fried tofu IS magic, if you ask me. I love how it’s treated just like any other protein in other cultures, not some odd substitute like in the US.
