Description

Charred eggplant and juicy tomatoes tossed in a savoury-sweet sauce for a quick, flavourful summer stir-fry.


Ingredients

Units Scale
Eggplant
  • 4 Chinese eggplants, approx 700g, cut into large bite-size pieces
  • 1/2 tsp salt
Sauce Stir-fry
  • 3 tbsp peanut or vegetable oil
  • 2 cloves garlic, sliced
  • 1 stalk spring onion, sliced
  • 2 large tomatoes, cut into large bite-size pieces

Instructions

  1. Soak sliced eggplant in salted water (1/2 tsp salt) for 15 minutes. Drain, rinse, and pat dry.
  2. In a small bowl, mix broth, soy sauces, vinegar, sugar, and cornstarch until smooth.
  3. Heat 2 tbsp oil in a large skillet over medium-high heat. Add eggplant and stir occasionally until lightly charred and tender. Remove and set aside.
  4. Add the remaining oil, garlic, and spring onion to the pan. Stir-fry briefly until fragrant.
  5. Stir in the tomato and cook for 2 minutes, until slightly softened.
  6. Return the eggplant to the pan. Stir the sauce again and pour it in. Cook until thickened and glossy.
  7. Transfer to a serving plate and enjoy hot over steamed rice or noodles.
