Ingredients

Scale
  • 2 large zucchinis
  • 1 tsp salt (for pre-salting)
  • 1-2 tsp neutral oil (sunflower or canola)
  • 2 cloves garlic, minced
  • 1 tsp minced ginger
  • 1 tsp light soy sauce
  • 1/3 tsp sugar
  • 1/2 tsp MSG
  • chilli flakes or fresh chilli for heat (optional)

Instructions

  1. Slice, remove the seeds and salt the Zucchini
  2. Cut zucchini into thin long sections.
  3. Toss with salt and let sit for 10–15 minutes to draw out water.
  4. Gently squeeze to remove excess moisture.
  5. Heat oil in a wok or pan over medium-high heat.
  6. Add garlic, ginger and chillies (if using) and stir until fragrant (about 30 seconds).
  7. Add zucchini and stir-fry for 2–3 minutes until tender-crisp.
  8. Add the sauce and MSG, splash in soy sauce. Toss to coat.
  9. Serve as a side dish or light main over rice.

    Don’t ‘do’ Tik-Tok but have always loved zucchini especially stir-fried :) ! Love your way of cutting it and presenting as I usually have just cut across the vegetable and not the long way – much more apetizing!
