A refreshing summer bubble tea with sweet mangoes, floral jasmine green tea, and chewy tapioca pearls—perfect for hot days. This isn’t just any bubble tea—it’s sunshine in a glass sweet mangoes + floral jasmine + chewy pearls = your next summer obsession. #MangoJasmineBubbleTea
While it may still be a few months away, I can’t help but dream about summer already. The warmth, the longer days, the BBQs, the beach—and of course, the refreshing drinks. So here I am, easing into the season with one of my all-time favourite thirst-quenchers: Mango Jasmine Bubble Tea.
This drink is basically a vacation in a glass. It’s tropical, floral, a bit chewy, a bit tangy—and entirely addictive. While mangoes usually peak in summer, they’re a bit of a rare luxury here in New Zealand. When you do find them, they can be eye-wateringly expensive. So, I usually reach for frozen mangoes, which are not only more budget-friendly but also consistently ripe and sweet.
Why Mango and Jasmine Make Sense Together
You might not think floral and fruity would work—but they really do. Jasmine green tea, with its subtle perfume-like aroma, pairs so well with the sunny sweetness of mangoes. The end result? A bubble tea that tastes bright and refreshing, like bottled sunshine.
We’re not just talking about flavour here either—green tea is loaded with health benefits. In many Asian cultures, especially in China, India, and Japan, green tea has long been used to boost longevity, support weight loss, and even manage blood sugar. It’s light, clean, and invigorating—everything you want in a summer drink.
Just remember: the way you brew it matters. Green tea can go bitter if brewed at too high a temperature. Keep it around 80–85°C and don’t over-steep, or you risk losing the delicate flavours that make this drink shine.
The Boba Craze: A Quick Dive
Before bubble tea became the worldwide sensation it is today, it was just an experimental treat in Taiwanese teahouses in the 1980s. Two places lay claim to its invention—Chun Shui Tang in Taichung and Hanlin Tea Room in Tainan. Originally made with black tea and chewy tapioca pearls, it has since evolved into a whole genre of drinks, with countless toppings and flavours to suit every palate.
By the 1990s, bubble tea had spread across Asia, and by the 2000s, it had firmly planted roots in Western countries like the US, Australia, and of course, here in New Zealand. Today, you’ll find bubble tea bars on nearly every corner of Auckland. Still, nothing beats making your own at home—especially when you get to tweak it exactly how you like it.
Homemade Boba Joy
What makes this Mango Jasmine Bubble Tea so special is that it’s completely customisable. You can adjust the sweetness, the strength of the tea, or even swap in coconut water or soda for the jasmine base. Want it creamier? Add a splash of milk. Want a vegan option? Use maple syrup instead of honey. It’s one of those drinks that feels like it was made just for you.
The tapioca pearls might look intimidating at first, but they’re honestly quite easy to prepare. A quick boil, a soak in a little brown sugar or syrup, and you’re ready to roll. They add that iconic chewy texture that makes bubble tea so fun to drink—especially with a fat straw and a little ice clinking in the glass.
This version of bubble tea is a favourite in our household, especially on hot days. Even the kids love it. It’s not overly sweet, has that nice floral hit from the jasmine, and is incredibly refreshing after a walk or a barbecue. And if you’re entertaining, serving this will absolutely wow your guests.
Steep the jasmine tea in hot water for 3–5 minutes. Remove the tea bags and refrigerate the tea until chilled.
Bring 4 cups of water to a boil. Add the tapioca pearls and cook for about 30 minutes or according to the package instructions. Stir occasionally to prevent sticking.
Drain the cooked pearls and soak them in brown sugar for extra flavour.
In a blender, combine mango chunks, cold water or tea, honey, and lime juice. Blend until smooth.
Divide the tapioca pearls into 4 glasses. Pour the mango blend over them, then top with chilled jasmine tea. Stir gently and serve with wide straws.
I don’t think we’ve ever attempted bubble tea at home. Laura does love it though, so we should try it out…we’re definitely in the heat of the summer here, so this looks mighty refreshing!
What a heavenly combo! It’s all the best parts of a mango smoothie, iced tea, and of course, boba dessert in one glass. So much fresher and healthier than anything you can get in a cafe, too.

I’m not into bubble teas, but I definitely love the pairing of mango and jasmine. I need to use it for cocktails and dessert creations!
