Tucked away in an unassuming warehouse in Kailua, Koʻolau Distillery might not be what you imagine when you hear the word “distillery.” There are no massive copper stills or expansive tasting halls here—just a single open-plan production room connected to a cosy bar and lounge area. Yet despite its modest size, Koʻolau packs a punch, offering one of the most engaging and intimate tasting experiences I’ve had.

When we arrived for our tour, I wasn’t quite sure what to expect. Hawai’i is known for many things, but whiskey isn’t typically at the top of that list. Yet Koʻolau Distillery is out to challenge that notion, and with some success. From the moment our guide—Olivia, who also happens to be the head distiller—introduced herself, I knew we were in for something special.

A Passionate Introduction to Craft Distilling

Olivia led us through their story with humour and genuine passion. She wasn’t just reading from a script; this was someone deeply invested in her craft. She explained how Koʻolau Distillery’s signature product, the Old Pali Road Whiskey, begins its journey with Hawaiian rainwater filtered through volcanic rock over generations. This pure artesian water, drawn from the Koʻolau Mountains, becomes the soul of their whiskey.

The production process—from mashing and fermenting to distilling, aging, and bottling—was all explained while we stood in one spot. You’d think that might get dull, but Olivia’s energy kept everyone captivated. It also made sense; everything happens in this one bay, giving visitors a unique opportunity to see and understand the entire distillation process up close. There’s even an option to bottle your own whiskey during the tour, which adds a nice personal touch.

Tasting the Spirits of Hawaiʻi

After the educational part of the tour, we moved on to the tasting—a generous flight of Koʻolau’s offerings. Their flagship Old Pali Road Whiskey was, of course, the highlight. While I wouldn’t call it exceptional compared to other craft whiskies, it had unique elements that made it worth discussing. The nose offered hints of vanilla bean, pepper, and grainy corn, with some buttercream and melon notes. On the palate, there was a smooth progression from light caramel and vanilla cream to a vegetal and slightly sweet finish with a lingering pepper note.

Although I found the whiskey to be pleasant, I wouldn’t say it stood out in terms of flavour depth. It’s a young spirit, and the grainy corn notes are a giveaway. Still, the fact that it’s made locally in Hawai’i makes it a novelty and a decent conversation piece. If they continue to refine their distillate, I can see Koʻolau developing something truly outstanding down the line.

Surprisingly, it was the Tradewind Gin that left a lasting impression on me. Especially the barrel-aged version—it was nothing short of a revelation. I’m not usually a gin drinker, but this one had a mellow, rounded complexity that I found quite enjoyable.

A Great Experience Beyond the Whiskey

What sets Koʻolau Distillery apart isn’t just its spirits; it’s the entire experience. The team’s warmth, the affordable price (I believe the bottle-your-own whiskey experience was around $50), and the cosy bar where you can relax with a custom cocktail all contribute to the overall vibe. Their spirits even make appearances in hand-crafted cocktails at their bar, which is a perfect place to unwind after the tour.

While the space itself may be small, it doesn’t feel lacking. In fact, the close quarters made for more meaningful interactions and a greater appreciation of the hands-on work that goes into every bottle. It felt more like being invited into someone’s passionate side project than visiting a commercial distillery, and that’s a rare thing.

Final Thoughts

Would I recommend Koʻolau Distillery? Absolutely. Even if whiskey isn’t your thing, the gin alone is worth the trip. The team, especially Olivia, makes it an engaging and memorable visit. This isn’t a flashy tourist trap, it’s a homegrown business that takes pride in its craft and its place in the community.
