Description

Beef Pater: Mindanao’s shredded beef & turmeric rice wrapped in banana leaves. A viral Filipino rice meal with bold, savoury flavours.

Ingredients

Units Scale
Beef Filling
  • 1 kg beef brisket, cubed
  • 1 large yellow onion, finely chopped
  • 1 whole garlic head, minced
  • 4 tbsp soy sauce (preferably Silver Swan)
  • 2 tbsp oyster sauce
  • 2 tsp freshly cracked black pepper
  • 2 tsp ground turmeric
  • 1 tsp sea salt
  • 3 tbsp cooking oil
  • 3 cups water (plus extra as needed)
For Serving
  • 10 banana leaf squares (8x8 inch, briefly passed over flame to soften)
  • 10 cups cooked rice (or turmeric rice)
  • palapa (spicy relish)

Instructions

  1. Heat oil in a heavy pot over medium heat. Sauté onions until translucent, then add garlic until fragrant. Add beef and sear until browned.
  2. Pour in water, deglaze the pot, then bring to a boil. Reduce heat to low, cover, and simmer for 2 hours (add ½ cup hot water if liquid reduces too much).
  3. Transfer beef to a bowl, reserving ½ cup broth. Shred with forks, then return to pot with broth, soy sauce, oyster sauce, pepper, and turmeric. Cook uncovered for 10 mins until liquid evaporates but meat stays moist.
  4. Place a banana leaf on a flat surface. Add 1 cup rice, top with beef, leaving a 2cm border. Fold lengthwise, then tuck ends to form a tight cylinder.
  5. Enjoy warm with palapa or as an open banana-leaf plate with rice and beef on the side.
