Ingredients

Units Scale
  • 1 medium upo (bottle gourd), peeled and sliced
  • 500 g pork belly, sliced
  • 3 tbsp bagoong isda
  • 6 cloves garlic, minced
  • 4 small shallots, sliced
  • 2 tomatoes, chopped
  • 4 cups water
  • 1 bunch greens (kamote tops, spinach or malunggay)
  • 3 slices ginger
  • 2 tbsp oil
  • salt freshly ground black pepper
  • chopped spring onions, to garnish

Instructions

  1. Sauté garlic, shallots, ginger and tomatoes in oil until fragrant
  2. Add pork and cook until lightly browned
  3. Pour in water and simmer until pork is tender (about 30 mins)
  4. Stir in bagoong isda for seasoning
  5. Add upo slices and cook for 7 minutes until tender
  6. Toss in greens just before turning off the heat
  7. Serve hot garnished with chopped spring onions.
