But let’s be real: crab meat is expensive these days. A proper crab and corn soup requires a generous amount of real crab to bring out that signature rich flavour, but using only crab can quickly add up in cost. So, to make this dish more budget-friendly without compromising on taste, I decided to tweak the recipe.
Instead of using only fresh crab meat, I cut down the amount and replaced some with shredded surimi (imitation crab). Surimi is not only cheaper but also has a similar sweet, briny flavour and delicate texture that works perfectly in this soup. To further enhance the seafood taste, I added medium-sized prawns that I had sitting in the freezer. The result? Heat a pot with some cooking oil and lightly sauté the minced garlic and the white parts of the chopped spring onions.

Pour in the water and add the reserved corn cobs. Bring the mixture to a boil, then lower the heat and let it simmer for 30-40 minutes. Simmering longer will help extract more flavour from the corn.
Add the crab meat, shredded surimi, and shelled shrimp to the pot. Continue to simmer on low heat for an additional 15 minutes.
In a small bowl, mix the tapioca starch with 1/2 cup of cold water to create a slurry.
Slowly pour the beaten eggs into the hot soup in a steady, thin stream while gently stirring the soup to create ribbons of egg.
Add the tapioca starch slurry to the pot and continue to simmer until the soup thickens to your desired consistency.
Season the soup with sesame oil, white pepper, and salt to taste.
