Hey food lovers! Its triple F today, Friday Fried Fish!

There’s something magical about revisiting the dishes that defined our childhood, and for me, Crispy Fried Golden Pompano is one of those meals that instantly transports me back to the warm and bustling kitchens of the Philippines. It’s a dish that epitomises the charm of Filipino home cooking—simple, comforting, and full of love.

A Nostalgic Classic

Growing up, fried fish was a mainstay on our table, whether it was galunggong, bangus, dalagang bukid, or on special occasions, pompano. While other types of fish were more budget-friendly, pompano always felt like a treat, reserved for times when we wanted to elevate the everyday meal. It wasn’t just about the fish itself; it was about the memories created around the table—family conversations, laughter, and the occasional playful battle for the crispiest bits.

The beauty of this dish lies in its simplicity. With just a touch of salt and pepper, the natural flavour of the fish shines through. Pair it with a warm bowl of sinigang, grilled veggies, or stir-fry, and you’ve got a meal that hits all the right notes of comfort and nostalgia.

Why We Love Crispy Fried Fish

Few dishes can rival the satisfaction of perfectly fried fish. That irresistible crunch when you bite into the skin, the tender, flaky flesh inside, and the salty, savoury aroma that fills the air—it’s pure bliss. When fried just right, even the bones turn into a crispy delight, eliminating the need for the usual delicate deboning process.

In our family, the race to claim the crispiest parts of the fish is a cherished ritual. It’s these little traditions, tied to something as simple as fried fish, that make the dish feel so special.

Tips for Perfect Crispy Fried Golden Pompano

  • Dry the Fish Thoroughly: Patting the fish dry before frying is key to achieving that golden, crispy skin and minimising oil splatter.
  • Season Generously: Don’t hold back on the salt and pepper—it’s what brings out the natural sweetness of the fish.
  • Oil Temperature: Make sure the oil is hot enough (around 180°C) to ensure the fish fries evenly without absorbing too much oil.
  • Don’t Crowd the Pan: Fry in batches if necessary to maintain the oil’s temperature and achieve the best crispiness.
  • Let It Rest: Allow the fish to drain on a wire rack or paper towels after frying to keep it crisp and free from excess oil.

Can this be done with an air fryer? What would need to be changed?
