Ingredients

Chicken Vegetables
  • 2 cups cubed pumpkin
  • 2 cups baby spinach
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp plain flour
  • 1 cup chicken stock
  • 1 cup cream
  • 1/2 cup parmesan, grated
  • salt
  • freshly ground black pepper

Instructions

  1. Season the chicken breast halves with salt and freshly ground black pepper.
  2. Dredge each piece in the all-purpose flour, shaking off any excess.
  3. Heat a few tablespoons of olive oil in a large skillet over medium-high heat.
  4. Add the chicken and cook for about 5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  5. In the same skillet, add a bit more olive oil if needed and cook the cubed pumpkin for about 7 minutes, or until tender. Remove and set aside.
  6. In the same skillet, melt the butter over medium heat.  Add the minced garlic and cook for about 1 minute until fragrant.
  7. Stir in the 1 tbsp of plain flour and cook for another minute, forming a roux.  Gradually whisk in the chicken stock and cream, stirring continuously to avoid lumps.
  8. Bring the mixture to a simmer and cook for 5 minutes until it begins to thicken.
  9. Return the cooked pumpkin to the skillet.
  10. Stir in the baby spinach and let it wilt in the sauce.
  11. Add the grated parmesan cheese and stir until melted and the sauce is smooth.  Season with additional salt and freshly ground black pepper to taste.
  12. Return the cooked chicken to the skillet, nestling it into the creamy sauce.
  13. Let everything simmer together for a few minutes until heated through and well combined.
  14. Serve the creamy spinach and pumpkin chicken over rice, pasta, or with crusty bread to soak up the delicious sauce.
