A Legacy of Fine Winemaking
Established in 1888, Santo Tomás is the second-oldest winery in Mexico and has witnessed an incredible transformation over the decades. Initially producing on a massive scale, the winery shifted its focus in 1988 under winemaker Hugo D’Acosta, reducing production from 300,000 cases annually to just 30,000. This decision prioritised quality over quantity, and today, Santo Tomás wines are synonymous with refinement and exceptional craftsmanship.
Though the main winery has relocated due to urban expansion, the original cellars in downtown Ensenada remain a historic gem. Visitors can explore the site, including a display of the winery’s first bottling plant from 1939, which offers a glimpse into the past.
The Tasting Experience
Our visit included a tasting of five distinct wines and three olive oils, a delightful way to appreciate Santo Tomás’s artisanal offerings. Here’s a closer look at what we tried:
- Santo Tomás Vino Blanco Colombard 2022: A bright straw-coloured white with fruity aromas and a silky finish.
- Santo Tomás Vino Rosado Grenache 2022: A semi-sweet rosé with strawberry notes, grapefruit aromas, and a creamy texture.
- Santo Tomás Vino Tinto Cabernet 2022: Light ruby red with black cherry and cedar notes; smooth with refreshing acidity.
- Mission 22 Vino Tinto: Deep cherry colour with plum and herbal hints, velvety tannins, and a balanced finish.
- Santo Tomás Barbera Vino Tinto 2022: A stunning red-violet wine with roasted fig and cherry petal aromas, a hint of licorice, and a silky texture. It balances bold tannins with a touch of sweetness for a truly memorable sip.

The olive oils were equally impressive, including the award-winning Ascolano variety and the herbaceous Mission oil, both perfect for dipping with fresh bread.
Ambience and Service
The setting was warm and inviting, with knowledgeable staff making the experience even more enjoyable. Though the pace of the tour felt rushed—likely due to the tight schedule of a cruise excursion—it didn’t detract from the overall charm. The rustic cellar atmosphere and beautifully displayed barrels added to the authentic vibe.
