No trip to Solvang is complete without indulging in some authentic European sausages and beer, and the Copenhagen Sausage Garden is the perfect spot for just that. This outdoor eatery in the heart of the Danish-inspired town offers a relaxed, casual vibe with picnic tables where you can enjoy a selection of sausages from around the world. Whether you’re a fan of traditional German bratwurst or looking to try something new, like their vegan sausage options, this place has something for every sausage lover.
We were particularly excited to try the famous Danish Rød Pølse, a bright red, boiled pork sausage that’s considered one of Denmark’s national dishes. With 11 family-made sausages from different countries, along with two vegan options, we knew we were in for a treat. What made the experience even better was their impressive selection of beers, which pair perfectly with the hearty sausages. Plus, there’s an extensive condiment bar, complete with mustards, sauerkraut, and chopped chiles, allowing you to customize your meal to your liking.

The Sausage Sampler: Four Flavors to Savor
We opted for the sausage sampler, which gave us a chance to try four different types for $26.95. It was served with plain cucumber slices and hoagie rolls, but the real stars were the sausages. Here’s what we picked:
- Rød Pølse: This iconic Danish sausage lived up to its reputation. The vibrant red colour comes from a traditional dye, and the flavour was reminiscent of the Vienna-style sausages, but with that extra Danish flair. If you want a true taste of Denmark, this one is a must-try.
- Bratwurst: Smoky and flavourful, the German applewood-smoked bratwurst was packed with spices, garlic, and onion. It’s easily one of the best bratwursts I’ve had outside of Germany.
- Kielbasa: The traditional Polish sausage didn’t disappoint, with its rich blend of spices, paprika, and red pepper. It was hearty, savory, and slightly spicy—just what you’d expect from a good kielbasa. My favourite of the bunch.
- Jalapeño Cheddar Bacon: This sausage packed a punch with its spicy jalapeño kick, balanced out by the creamy cheddar and smoky bacon. If you’re a fan of bold flavours, this one’s for you.
Every bite was packed with flavour, and the variety of sausages gave us a fantastic range of textures and tastes. It’s the kind of place where you can’t go wrong, no matter which sausage you choose. The portions were generous, and the sampler was perfect for sharing.

More Than Just Sausages: A Standout Salad
Surprisingly, one of the highlights of our visit was the Apple and Arugula Salad ($11.95). I’ll admit, I’ve never been a fan of arugula—it always seemed too bitter for my taste—but this salad changed my mind. The crisp apples, dried cranberries, and shaved Parmesan added a perfect balance of sweetness and tartness, while the honey thyme vinaigrette tied it all together. The balsamic reduction on top was a nice touch that really elevated the flavours. It was simple yet incredibly refreshing, making it the best arugula salad I’ve ever had. Who knew?
Beer Sampler: A Global Beer Tour
Of course, no sausage feast would be complete without a beer to wash it all down. We opted for the beer sampler, which featured a mix of European brews and some local favourites. Here’s what we tried:
- Carlsburg Pilsner (Danish Pilsner, 5%): [Yes is Carlsburg not Carlsberg] Light, refreshing, and balanced, this Danish classic had a smooth mouthfeel and a slightly hoppy aftertaste.
- Quirk Cherry Lime Seltzer (4.2%): If you’re into seltzers, this one was a delight. The lime was zesty, the cherry added a touch of sweetness, and the carbonation made it super refreshing.
- Einstok White Ale (Icelandic Witbier, 5.2%): This ale had a nice malt sweetness, with hints of honey and citrus. The orange zest and coriander added complexity without being overwhelming.
- Fruh Kolsch (Kolsch Blonde Beer, 4.8%): This one was my personal favourite—light, crisp, and with just the right amount of floral and spicy hop flavours. It had a pleasant, dry finish that made it really easy to drink.
- Honest Abe Cactus Cooler Mead (Viking Style Mead, 8.6%): For something different, we tried this mead, which had tropical flavours of orange and pineapple. Sweet and refreshing, it was perfect for a warm day.
- Weihenstephaner Original (Helles Lager, Est. 1040 A.D.): This German classic was crisp with a subtle sweetness and a brisk hop flavour. Its history as one of the oldest beers in the world added a fun element to the tasting.
- Sam Smith Pear Cider (Organic Pear Cider, 5%): If you’re a cider fan, this one is not to be missed. It was dry, sparkling, and full of rich pear flavour, with a lovely aroma that reminded me of a summer orchard.

Oh my goodness, I’d completely forgotten about Solvang! I went to college in Santa Barbara, just south of it. It was such a cute town. The sausages look wonderful but the salad really speaks to me!
Oh I do love European style sausages, and this restaurant sounds amazing. I’ve never been to Solvang (and it’s a long way across the country to get there), but this is definitely a place I would visit…often.
I love sausage and I also love really good beer. This looks like a perfect place for me to visit!
