Bacon Cuchifrito
- 12 slices streaky bacon
- 1/2 cup all purpose flour
- sliced cucumber
- oil
- 1/3 cup flaked tinapa (smoked fish)
- 5 cups leftover rice
- 4 cloves garlic
- freshly ground black pepper
- salt
- oil
- 2 tomatoes, chopped
- 1 onion, chopped
- 2 salted duck egg, chopped
- 2 pcs calamansi (or lemon/lime)
- freshly ground black pepper
Instructions
Bacon Cuchifrito
- In a frying pan, heat some oil.
- While the oil heats, coat your bacon lightly with flour to give it that extra crisp when fried.
- Fry the bacon until it turns golden and crispy. Set it aside.
Salted Duck Egg & Tomato Salad
- Slice your tomatoes, onion, and salted egg.
- In a bowl, combine the sliced ingredients, squeeze some calamansi juice over them, and drizzle with pepper.
Tinapa Rice
- In a pan, sauté garlic and tinapa flakes (smoked fish) until fragrant.
- Add your leftover rice to the pan, season with freshly ground pepper, and salt to taste. Cook until the rice is heated through and well mixed.
- Serve hot, alongside the bacon, salad, and sliced cucumber
