Bacon Cuchifrito Tinapa Rice
  • 1/3 cup flaked tinapa (smoked fish)
  • 5 cups leftover rice
  • 4 cloves garlic
  • freshly ground black pepper
  • salt

Instructions

Bacon Cuchifrito

  1. In a frying pan, heat some oil.
  2. While the oil heats, coat your bacon lightly with flour to give it that extra crisp when fried.
  3. Fry the bacon until it turns golden and crispy. Set it aside.

Salted Duck Egg & Tomato Salad

  1. Slice your tomatoes, onion, and salted egg.
  2. In a bowl, combine the sliced ingredients, squeeze some calamansi juice over them, and drizzle with pepper.

Tinapa Rice

  1. In a pan, sauté garlic and tinapa flakes (smoked fish) until fragrant.
  2. Add your leftover rice to the pan, season with freshly ground pepper, and salt to taste. Cook until the rice is heated through and well mixed.
  3. Serve hot, alongside the bacon, salad, and sliced cucumber
