If you’ve never heard of cuchifritos before, you’re in for a treat! Cuchifrito refers to a variety of fried dishes, predominantly pork-based, that are popular in both Puerto Rican and Spanish cuisine. The term comes from the Spanish words “cuchi” (meaning pig) and “frito” (fried), a fitting name for these crispy, flavourful creations. While the traditional dish originated in Spain and Puerto Rico, it’s taken on many forms over time, each with its own regional twist.

In Spain, particularly in the region of Castile, cuchifrito typically consists of small pieces of pork fried in olive oil and garlic—simple but delicious. Meanwhile, in Puerto Rico, cuchifritos have evolved into a much broader category, encompassing everything from morcilla (blood sausage) to chicharrón (fried pork skin) and even papas rellenas (fried potato balls stuffed with meat). These fried delights are often sold at street food kiosks and have become a staple of Puerto Rican Street food culture. In New York City, cuchifrito vendors are a common sight in Puerto Rican and Dominican neighbourhoods, where their colourful signs and lively atmosphere reflect the vibrant communities they serve.

But here’s where it gets interesting: the recipe I’m sharing today is not your typical cuchifrito. Instead, we’re taking this traditional dish and giving it a Filipino twist with Bacon Cuchifrito—a delightful fusion of flavours that blends the savory, crispy goodness of bacon with the spirit of Puerto Rican fried food. This dish, much like the Filipino “silog” breakfasts, is sure to please anyone who enjoys bacon for breakfast.

The Journey of Bacon

Before we dive into the recipe, let’s talk about bacon. Did you know that bacon has ancient origins, dating back to 1500 B.C. in China? The Chinese were the first to preserve pork using methods that would later give rise to the bacon we know and love today. It wasn’t until the technique made its way to North America that bacon truly became the beloved breakfast staple it is now, and eventually, Filipinos adopted it into their cuisine as well. In the Philippines, bacon is most often enjoyed with eggs and fried rice—a hearty breakfast combination we all know as bac-si-log.

But this dish? It’s something special. Bacon Cuchifrito elevates the classic Filipino breakfast by taking crispy, breaded bacon and serving it alongside tinapa rice and a tangy salted duck egg and tomato salad. Think of it as a reimagined version of a beloved silog, with a crunchy twist inspired by Puerto Rican cuisine.
