When it comes to comfort food in the Philippines, Sopas is right at the top of the list. It’s the kind of dish that brings you warmth and nostalgia, often enjoyed on cold days or when you’re feeling a bit under the weather. Traditionally, this humble soup is made with elbow macaroni, chicken, vegetables, and a splash of evaporated milk, creating a rich and creamy broth. But today, we’re taking this beloved classic up a notch with some gourmet twists – Truffle Paste, Truffle Oil, and Guanciale.

Now before you think I’m out to turn this dish into something unrecognizable, let me explain. This wasn’t a deliberate attempt to “fancy up” Sopas. It was more out of necessity, using up ingredients I had on hand before going on holiday. I had a generous 500g jar of truffle paste, some Guanciale, and a box of mushrooms that needed to be used up. So, what better way to repurpose these gourmet ingredients than by reinventing my daughter’s favourite dish, Sopas?

What is Sopas?

Sopas, which means “soup” in Spanish, traces its roots back to the Spanish colonial period in the Philippines. Over the years, it evolved into the comforting, creamy noodle soup that many Filipino households cherish today. Sopas also has influences from the American colonial period, as its ingredients and form are quite similar to the classic American chicken noodle soup.

The Filipino version is a creamy, hearty meal made with elbow macaroni, chicken, and veggies like carrots and celery. It’s made extra rich with the addition of evaporated milk, giving it a distinctive creamy taste and texture. Each family has its own version of Sopas, and some even make creative variations like Corned Beef Sopas or Hotdog Sopas. For me, the dish is pure comfort, but today, we’re adding a gourmet twist that’ll elevate it to new heights.

Reinventing Sopas with Truffle & Guanciale

I had already used my truffle paste in several dishes, but there was still some left, so I thought, “Why not add it to Sopas?” Along with the truffle, I had some Guanciale in the fridge, a cured pork jowl with a rich, fatty flavour that adds a savory depth to any dish. With the addition of mushrooms and shell macaroni pasta (which I had in the cupboard), this became a version of Sopas that’s earthy, creamy, and absolutely packed with umami.

You might think that adding truffle paste and Guanciale would overpower the humble Sopas, but the flavours worked incredibly well together. The rich, buttery truffle brought an earthy umami depth, while the Guanciale added a porky, fatty element that paired beautifully with the creamy broth. It’s an elevated version of Sopas that still has its comforting soul, but with a sophisticated edge.

The Result

The result was something truly special, a comfort food with a luxurious twist. The creamy broth melds with the earthy truffle flavours and the richness of Guanciale fat, creating a complex yet balanced dish. Every spoonful had layers of flavour, from the familiar creaminess of Sopas to the decadent umami notes from the truffle and pork fat.

Instructions

  1. In a large pot, cook the diced Guanciale over medium heat until the fat is rendered, and the pieces are crispy. Remove the Guanciale and set aside, leaving the fat in the pot.
  2. In the same pot with the Guanciale fat, add and sauté the onions and garlic.
  3. Stir in the sliced mushrooms and cook for another 4 minutes until they release their moisture and start to brown.
  4. Pour in the chicken broth, add the macaroni, and bring the mixture to a boil. Lower the heat and let it simmer for 10 minutes.
  5. Stir in the truffle paste and evaporated milk, then season with salt and pepper to taste. Let the soup simmer for another 5 minutes, stirring occasionally.
  6. Add the crispy Guanciale to the pot. Stir to combine and cook for an additional 3 minutes to heat through.
  7. Drizzle the truffle oil over the soup just before serving, and garnish with small dollops of truffle paste.
  8. Serve hot!
