They’re versatile, freezer-friendly, and incredibly easy to make.

As consumers sought breakfast options with more protein, Starbucks baristas noticed a surge in orders for breakfast sandwiches without the bread. People were craving that protein punch!
To meet this demand, Starbucks’ recipe development team got creative. They turned to the sous vide method—a French technique that gently cooks foods using consistent heat from a warm water bath. Eggs, being delicate proteins, benefit greatly from sous vide cooking.

These bites are crafted with a base of blended cottage cheese and egg, plus additional cheese, and seasonings to create distinct flavours. Starbucks’ egg bites are cooked to perfection using sous vide, resulting in a smooth texture that reheats beautifully. The trend took off from there!

Starbucks’ egg bites set the standard, and other major quick-service restaurants like Dunkin’ and Chick-fil-A followed suit. They now offer an array of delectable flavours.
Beyond Starbucks, grocery giants like Whole Foods and Trader Joe’s jumped on the bandwagon, providing pre-packaged egg bites for at-home culinary enthusiasts. Even Costco, known for bulk-buying, made room for Starbucks’ branded egg bites—proof of their mass appeal.
Inspired by the egg bite craze, I decided to create my own version and like most I am using muffin tins, as not everyone has a sous vide machine at home. Muffin tins are more accessible and make the whole preparation a breeze in the shortest time possible.
This egg bites are simply little frittatas if you will. They have veggies, cheese, and meat if you like. Whatever you enjoy in your eggs, you can pretty much throw into egg bites. For my favourite combo, I used baby spinach, spring onions, red pepper, leftover roast chicken, ricotta cheese, and cheddar cheese. This combination offers a delightful balance of flavours and textures.
The key to perfect egg bites is not to overload your muffin slots with too much filling. Each muffin cup should have a feel-good amount of fillings to still taste like an egg bite rather than a salad.
These egg bites are supremely fluffy, thanks to the addition of ricotta cheese, which adds a creamy richness to the eggs. Baking them in a muffin tin ensures that each bite is cooked to perfection, with a slightly crispy edge and a soft, tender interior.
These egg bites are also incredibly convenient. You can make a batch ahead of time and store them in the fridge or freezer. When you’re ready to eat, simply reheat them in the microwave for a quick and satisfying meal.
Preheat oven to 180°C. In a small bowl, whisk together the ricotta cheese and milk until creamy. The mixture should be slightly thick; set aside.
In a separate bowl, whisk the eggs.
Add the ricotta mixture to the bowl with the eggs, sea salt, and garlic powder, and combine.
Spray a muffin tin with non-stick cooking spray.
Add baby spinach, spring onions, leftover roast chicken, and red chillies to each muffin cup.
Pour egg mixture over the fillings and top with cheddar cheese. Don’t fill all the way to the top or they will puff over.
Bake in the oven for 15 minutes until the egg bites are fluffy and cooked.
Let the egg bites cool slightly before running a knife around the muffin to pull it out of the tin. Top with some fresh cracked pepper and enjoy!
To reheat, just cook in the microwave for a minute or two.
