Biscuit
- 2 cups all-purpose flour, plus more for kneading
- 1 tbsp baking powder
- 1/4 tsp baking soda
- 1 tsp salt
- 3 tbsp sugar
- 1/2 cup cold unsalted butter, cubed (or use salted butter for a salty-sweet combo)
- 3/4 cup buttermilk
- 1/4 cup honey
- 1/4 cup butter, melted
Instructions
- Preheat your oven to 220°C. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your hands, work the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the buttermilk and stir just until the dough comes together. Be careful not to overmix.
- Turn the dough out onto a lightly floured surface and gently knead it a few times. Form into 1 inch round spheres and lightly flatten it then place them on the prepared baking sheet.
- In a small bowl, mix together the melted butter and honey.
- Brush the tops of the biscuits with the honey butter mixture. Bake for 12-15 minutes, or until the biscuits are golden brown and cooked through.
- Once out of the oven, brush the biscuits again with the remaining honey butter mixture. Serve.
