Fish paste stuffed tofu is a Chinese classic dish that makes for an easy and satisfying meal. The smooth, silky, nearly tasteless tofu contrasts beautifully with the umami-filled and chewy texture of ground fish paste, creating a delightful play on textures and tastes. This dish, though simple, is deeply comforting and super easy to prepare.

Fried stuffed tofu was once a popular dim sum dish, dating back to the days when traditional dim sum trolleys were still used in many restaurants. These trolleys, often pushed by aproned ladies, featured built-in hot plates where they fried tofu and various dim sum items like stuffed peppers, water-chestnut cakes, and radish cakes. While the spectacle of trolleys roving down the aisle with sizzling hot plates is now mostly a thing of the past, I fondly remember experiencing this for the first time in Hong Kong. Fortunately, in Auckland, stuffed tofu remains a staple in dim sum restaurants, though it’s now served plated, sans the trolley show.

My love for Fish Paste Stuffed Tofu goes back to my time living in Malaysia, where it was a regular part of my diet. This dish is one I miss a lot, but luckily, it’s quite easy to recreate at home. Fish paste can be conveniently bought from Asian groceries, making the filling preparation a breeze. If you prefer to make the paste from scratch, which I do, you can use firm white fish fillets such as halibut, haddock, sole, or catfish. Alternatively, ground beef, chicken, or pork can also be used, but make sure to whip it up until it’s elastic to get that texture this dish is known for.

Easy and satisfying Fish Paste Stuffed Tofu: A Chinese home-cooking classic with smooth tofu and fragrant fish paste. Perfect for lunch or dinner.


Ingredients

  • 1 block of firm tofu, sliced into 1-inch-thick pieces
  • 300 g fish paste (store-bought or homemade from firm white fish fillets)
  • 6 cloves garlic, minced
  • 2 stalks spring onions, finely chopped
  • 1/2 tsp white pepper
  • 2 tsp sesame oil
  • 2 tsp light soy sauce
  • salt, to taste
  • oil, for frying

Instructions

  1. Prepare the Tofu, slice the block of tofu into 1-inch-thick pieces. Carefully slice out a small X shaped incision in the centre of each piece without cutting through.
  2. If using store-bought fish paste, place it in a bowl. If making your own, grind firm white fish fillets in a food processor until smooth. Combine the fish paste with minced garlic, chopped green onions, white pepper, sesame oil, soy sauce and a pinch of salt. Mix well until the paste is smooth and very sticky.
  3. Fill each tofu pocket with the fish paste mixture, smoothing it out with the back of a spoon or your fingers.
  4. Heat a generous amount of oil in a skillet over medium heat. Place the stuffed tofu pieces in the skillet, tofu side down. Fry until golden brown and crispy, about 3-4 minutes. Flip and cook the other side until the fish paste is golden and heated through.
  5. Remove the tofu from the skillet and drain on paper towels. Serve hot with your favourite dipping sauce, like soy sauce with a dash of sesame oil and sliced chilies, or sweet chili sauce.
