Description

Mexican-inspired Chipotle Honey BBQ Ribs: Sweet, tangy, and smoky pork ribs perfect for any occasion. Easy recipe using a smoker and oven.

Instructions

  1. Prepare the Ribs, start by removing the membrane from the back of the ribs. This will help the ribs to become tender and allow the flavours to penetrate better. Season the ribs generously with salt, pepper, smoked paprika, garlic powder, onion powder, and ground cumin.
  2. Make the Sauce, in a medium bowl, mix together the minced chipotle peppers, honey, brown sugar, apple cider vinegar, tomato ketchup, and soy sauce. This will be your sauce.
  3. Smoke the Ribs, prepare your hooded charcoal grill a bit of charcoal, light it up and make sure it is in full ember, add your wood chips (I used manuka wood chips) and let it smoke. Place the ribs away from the direct heat and smoke for about 2 hours.
  4. Remove ribs from the grill then coat it with the sauce, wrap the whole ribs tightly using an aluminium foil, seal the edges then finish in the 150C preheated oven. Bake for an additional 2 1/2 hours or until the meat is tender and pulls away from the bone easily.
  5. Caramelize the sauce, remove the foil and brush the ribs with more of the chipotle honey sauce drippings. Increase the oven temperature to 200°C and bake for another 10-15 minutes, or until the sauce has caramelized and become sticky.
  6. To serve, let the ribs rest for a few minutes before cutting them into individual pieces.
