Ingredients

  • 1/2 head cauliflower, cut into florets
  • 250 g green beans, trimmed
  • 200 g white button mushrooms, sliced
  • 2 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 tbsp kicap manis (sweet soy sauce)
  • 3 tbsp dried shrimps (omit for vegetarian/vegan)
  • freshly ground black pepper
  • salt
  • fish sauce (use only salt for vegan alternative)
  • oil

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook until crisp-tender, about 4 minutes.
  2. Drain the green beans and rinse under cold water to stop the cooking process. Pat dry and transfer to a large bowl.
  3. In a large bowl, toss the cauliflower florets with a drizzle of oil, 1/2 teaspoon of salt, and freshly ground black pepper.
  4. Spread the cauliflower evenly on a baking tray and roast in a 230°C preheated oven, tossing once halfway through, until tender and golden brown in spots, about 20 minutes.
  5. Heat a bit of oil in a large skillet over medium heat. Add the minced garlic and finely chopped shallots, sautéing until fragrant.
  6. Increase the heat to medium-high and add the dried shrimps (if using) and sliced mushrooms. Season with salt and freshly ground black pepper.
  7. Cook, stirring occasionally, until the mushrooms are tender and golden, about 5 minutes.
  8. Add the roasted cauliflower and blanched green beans to the skillet with the mushrooms and aromatics.
  9. Drizzle with kicap manis and a splash of fish sauce. Toss everything together to coat evenly and heat through.
  10. Adjust seasoning with more salt and pepper if needed.
  11. Transfer the mixture to a serving dish and serve hot.
