Ingredients
Units Scale
Chicken
- 1 kg chicken wings
- 1 cup cornstarch
- oil, for frying
- salt
- 6 cloves garlic, minced
- 1-inch piece ginger, grated
- 3 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp sugar
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp chilli flakes
Instructions
- In a large bowl, combine all marinade ingredient together. Mix well to combine.
- Add the chicken wings to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavours to meld.
- Remove the marinated chicken wings from the refrigerator and let them sit at room temperature for about 30 minutes.
- Place cornstarch in a shallow dish. Remove each chicken wing from the marinade, allowing any excess marinade to drip off, and coat evenly in the cornstarch. Shake off any excess cornstarch and place the wings on a wire rack set over a baking sheet.
- In a large wok or deep fryer heat oil to 180°C. Working in batches, carefully add the chicken wings to the hot oil, making sure not to overcrowd the pot.
- Fry the wings for 10-12 minutes, or until they are golden brown and cooked through. Use a slotted spoon to transfer the fried wings to a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.
- Serve.
