Units Scale


  1. In a small bowl, combine the mayonnaise and onion soup mix. Set aside.
  2. Season the chicken thighs with salt and freshly ground black pepper. Place them skin-side down in an unheated large cast iron skillet. Cook over medium-high heat until the chicken skin is golden brown and releases easily from the pan, about 10 minutes.
  3. Flip the chicken and sear until browned on the second side, about 5 minutes.
  4. Transfer the chicken to a plate. Add the onion wedges to the pan and cook until light golden brown on both sides, about 2 1/2 minutes per side.
  5. Add apple cider vinegar and crumbled chicken cube to the pan, scraping up any browned bits from the bottom with a wooden spoon. Turn off the heat.
  6. Spread 1 tablespoon of the mayonnaise mixture onto each piece of chicken. Return the chicken skin-side up to the pan, arranging the onions around them.
  7. Roast in a preheated oven at 200°C for about 20 minutes.
  8. Switch the oven to the grill setting and increase the heat to 220°C. Grill until the top of the chicken turns golden brown.
  9. Remove from the oven and serve!
