This tantalizing beef stew, uniquely seasoned with annatto seeds extract and infused with tangy vinegar, offers a culinary journey through Guam’s diverse culinary landscape.

The roots of Chamorro Bistek trace back to Guam’s intricate history, where Indigenous Chamorro traditions intertwine with Spanish, Mexican, Filipino, and American influences. It’s a testament to the island’s rich cultural tapestry, reflected in every tantalizing bite of this beloved dish.

Reminiscent of its Filipino counterpart, Bistek, Chamorro Bistek shares similarities in name and essence. It’s not surprising, given Guam’s significant Filipino population, who likely brought their culinary traditions to the island. However, Chamorro Bistek boasts its own distinct flair, with a unique blend of ingredients and cooking techniques that set it apart.

Traditionally, Chamorro Bistek features thinly sliced beef, onions, garlic, black pepper, vinegar, and annatto-flavoured water. The addition of peas or green beans enhances the dish’s texture and flavour, creating a symphony of tastes that dance on the palate.

Preparing Chamorro Bistek is an art form, passed down through generations. The meat is seasoned and simmered to perfection, allowing the flavours to meld and the meat to tenderize. The result is a dish that tantalizes the taste buds with its rich, tangy profile and vibrant colours.

Served atop a bed of fluffy white rice, Chamorro Bistek is more than just a meal – it’s a celebration of Guam’s culinary heritage. It’s a dish that brings families together, evoking memories of shared meals and cherished traditions.
