Units Scale
  • 250 g uncooked fettuccine
  • 500 g roasted chicken, cut into small bite-size pieces
  • 150 g fresh baby spinach
  • 1/2 cup freshly grated parmesan cheese
  • 1 cup cream
  • 4 cloves garlic, minced
  • 1 small onion, minced
  • 1/3 cup chicken stock
  • 1 tsp lemon juice
  • 1/2 tsp Dijon mustard
  • 1/4 tsp dried parsley
  • 1/4 tsp dried basil
  • 1/4 tsp thyme
  • 1/4 tsp oregano
  • 1/2 tsp red pepper flakes
  • salt
  • freshly ground black pepper
  • 3 tbsp butter
  • olive oil


  1. Boil a large pot of salted water for the pasta. Cook the fettuccine al dente according to package instructions.
  2. Heat butter and olive oil in a skille tthen sauté the minced garlic and onions until fragrant.
  3. Add the chicken broth, lemon juice, Dijon mustard, dried parsley, dried basil, thyme, oregano, and red pepper flakes. Return the pan to the heat and bring it to a low boil then simmer for a minute.
  4. Add the roasted chicken, cream, and fresh spinach to the pan. Cook for about 5 minutes or until the chicken is cooked through and the spinach is wilted.
  5. Drain the cooked pasta and toss it with the sauce in the pan.
  6. Stir in the freshly grated parmesan cheese until melted and well combined.
  7. Season with salt and freshly ground black pepper to taste.
  8. Serve immediately, garnished with additional parmesan cheese.
